Red Grouse breasts
Red Grouse breasts, cold beech-wood and infused with forest fruits.
This meat is a beautiful rich dark red color with an earthy moorland taste. The infused forests fruits which are found in the Grouse's habitat create a sweet earthy gamey taste alone with a bite of beech-wood smoke.
Season with salt and pepper. Place the breasts into a preheated frying pan with Rapeseed oil (or similar) at a medium heat for 3-5 mins, turning occasionally until the juices run clear on the outside. The meat can be served rear or well done. Remove from the pan and leave to rest for 2-3 mins before finely slicing before serving.
